Food Gold: Lemon Cilantro Hummus

This week we are going to make a bright, herbacious hummus with lemon and cilantro. There’s no cooking involved and all the ratios are pretty open to interpretation. Just be sure to use super fresh ingredients and our suggestions on the garnish front you are golden. DIY Sabra!

Lemon Cilantro Hummus

3/4 cup good quality olive oil, nothing too too fruity or strong tasting though

3 tablespoons freshly squeezed lemon juice

1 tablespoon fresh chopped cilantro, plus extra for garnish

1 tablespoon tahini aka sesame paste

2 cups chickpeas, rinsed and washed very well. *Sammy Bananas says to “rub them until the skins fall off” for supreme smoothness but that sounds a bit precious to me.

Pine nuts for garnish

Salt/Pepper to taste

Recipe:

1. Throw everything in a food processor and process on “medium” until smooth and beautiful. Adjust seasonings and all ingredients to taste.

2. Serve in a nice bowl with garnish of cilantro, olive oil and paprika.
